I thought I would try something different for today’s post and share one of my favorite recipes. Thanks to SIBO, the days of carefree eating (full of gluten and dairy) are long gone for me. I have had to learn to try new foods and to cook from scratch rather than from a package.
My husband and I have spent the last few years perfecting some of our favorite recipes from my healthy days to accommodate my now finicky digestive system. One of my husband’s favorite dishes is my shrimp scampi. While I have had to omit some of the original ingredients, like onions, I have managed to make a gluten free/dairy free version that is just as good as the original. The dish is not only delicious, but it is quick to make and only requires six ingredients!
Easy Shrimp Scampi
Serves 4, Ready in 20 minutes
- 5 tablespoons vegan butter
- 2-3 cloves garlic, minced
- 1/3 cup white wine
- 1/3 cup lemon juice
- 2-3 tablespoons gluten free/dairy free bread crumbs
- 1 lb. medium raw shrimp with tails
In a large saucepan, melt butter on low heat. Once melted, add minced garlic and lightly brown. Add wine and lemon juice and let simmer for 3 minutes.
Arrange shrimp in the saucepan and heat for 3 minutes on each side. Once the shrimp is cooked, add breadcrumbs and mix until the sauce has thickened.
Serve scampi on your choice of lightly sautéed zoodles or rice.
If you follow a strict low FODMAP diet, you may substitute 1 tablespoon garlic infused olive oil for the minced garlic.
If you are on a prescribed diet, don’t be afraid to experiment with some of your favorite recipes and see if you can’t modify them to fit your needs. If you are gluten free like me and once lived for glutenous pasta, try using a spiralizer to make noodles from vegetables. I no longer miss pasta and Lil’ Man loves the fun curly cues that emerge from the machine. While he won’t eat zucchini, he will devour zoodles! I once despaired over the restrictiveness of my prescribed diet, but now I know it has my whole family eating healthier and has given me the opportunity to find new foods to love.
